A hearty and comforting slow cooker recipe featuring tender beef stew meat and perfectly cooked potatoes in a savory onion soup mix and garlic sauce, finished with fresh parsley for garnish.
Total Time:8 hours 10 minutes
Yield:6 servings
Ingredients
Meat and Vegetables
2 pounds beef stew meat cut into 1-inch cubes
3 pounds potatoes cut into chunks (Russet, Yukon Gold, or red potatoes)
Seasonings and Liquids
1 ounce onion soup mix (1 packet)
4 cloves garlic minced
1 cup low sodium beef broth
Black pepper to taste
Salt to taste (optional)
6 tablespoons unsalted butter sliced
Garnish
Fresh parsley chopped
Instructions
Layer Ingredients: Place the potato chunks at the bottom of the slow cooker, then add the beef stew meat on top of the potatoes.
Add Seasonings: Sprinkle the entire packet of onion soup mix evenly over the meat and potatoes, then add the minced garlic and season with freshly ground black pepper. Use salt sparingly as the onion soup mix is salty.
Top with Butter and Broth: Distribute the sliced butter evenly over the ingredients, then pour the beef broth over everything to enrich the flavor and prevent dryness. Tossing is optional.
Cook: Cover the slow cooker with the lid. Cook on LOW for 8 hours to ensure tenderness and thorough cooking of potatoes.
Finish and Garnish: Once cooked, gently stir the mixture to combine flavors. Adjust seasoning with additional salt and pepper if needed. Garnish with chopped fresh parsley before serving.
Notes
Cut potatoes into evenly sized chunks to ensure even cooking; smaller pieces get softer, larger ones hold shape.
If sauce is too thin, mash some potato chunks to naturally thicken it.
Taste and adjust salt after cooking because the onion soup mix may add sufficient saltiness.
